How to Choose a Commercial Combi Oven

Compare tray formats, capacity, controls and utility requirements before buying a commercial combi oven, with examples from real DONGIC models.

The short answer

Choose a commercial combi oven by matching the menu and peak batch requirement to a specific tray format, loading arrangement and energy configuration. Then compare controls, cleaning features, installation requirements and service support. Tray count alone is not a complete measure of useful capacity.

A combi oven supports steam, hot-air cooking and combinations of the two where specified by the model. The important buying question is how the selected equipment fits your actual production routine. A hotel, bakery and central kitchen may all request a “10-tray oven” while needing quite different controls, racks and site connections.

1. Start with the menu and the busiest batch

Write down what will be cooked, how much must be ready together, the container depth and whether different items share the same cooking program. Include loading, unloading and cleaning in the schedule. A useful capacity discussion is based on the food you plan to cook, not a universal promise of meals per tray.

For a planning example, assume your own kitchen trial shows that one pan holds 12 portions of a particular dish and you need 120 portions in one batch. That job needs 10 occupied pans before considering spacing, mixed dishes or reserve capacity. The 12-portion figure is only an example, not a DONGIC output rating; replace it with your recipe and loading test.

If you need several batches within a short period, also check the full batch cycle. Adding shelves will not solve a preparation or unloading bottleneck elsewhere in the kitchen.

2. Compare both tray count and tray format

Always record capacity as a pair: number of positions plus the accepted pan format. GN 1/1 and GN 2/3 are different formats. A four-position GN 2/3 unit and a six-position GN 1/1 unit should not be compared as though the only difference were two extra shelves.

Check the pan dimensions and depth you actually use, the distance between shelves, and the rack arrangement required by your food. Tall items or deep containers may mean not every nominal position is usable at the same time. Confirm the accepted accessory format with the selected model.

3. Compare real models on a consistent basis

These ratings describe different configurations. Do not add the listed steam and baking ratings to create an assumed electrical connection load, or use the gas rating alone to estimate running costs. Request the connection schedule for the chosen model. Check any auxiliary electrical requirements for gas equipment as well.

4. Match the control system to the way your team works

Compare the controls your staff will actually use: manual adjustments, repeatable programs, food-probe functions and cleaning routines. The DGCSJ02B-E6 / DGCSJ02-E6 product family lists a 7-inch LCD and 99 nine-stage presets. The DGCSJ04B-E6 lists a touchscreen and a different recipe platform. Both serve food production, but their listed operating features are not identical.

For a repeat menu, ask how recipes are entered, recalled and adjusted. For mixed production, ask how your proposed sequence fits the controls. If a probe is important to the workflow, confirm the supplied probe and operating mode rather than inferring the configuration from a product photograph.

A request for a short demonstration of your intended sequence can be more useful than comparing the number of screen functions. Do not assume every feature shown in a series description is standard on every model.

5. Resolve cleaning and installation questions before ordering

Cleaning features vary by platform and version. The DGCSJ04B-E6 listing includes automatic cleaning and descaling functions. Confirm the applicable cleaning procedure, consumables and routine maintenance for your selected model; an automatic cycle does not mean the machine requires no operator attention.

Prepare a site checklist covering the electrical supply, gas where applicable, water connection and treatment requirements, drainage, ventilation and access for service. Requirements such as water pressure, treatment specification or installation clearance should come from the selected model’s installation information, not a generic guide.

  • Measure the doorway and full delivery route, not just the final oven location.
  • Allow for door opening and safe access to loaded pans.
  • Confirm whether the quoted scope includes a stand, rack, trolley, pans or other accessories.
  • Ask your installer to review the connection information before confirming the model.

Is a 20-tray oven always a better choice than a 6-tray oven?

No. Start with the menu, usable pan positions and peak batch schedule. A larger unit must also fit the installation, staffing and loading process. Compare the exact models and the expected work rather than choosing by tray count alone.

Can a gas combi oven operate without electricity?

Do not assume so. Gas describes the heating configuration; controls and other functions may still require an electrical connection. Request the full installation requirements for the chosen model.

Does every DONGIC combi oven have the same cleaning system?
