How to Choose a Commercial Deck Oven: Decks, Trays and Energy

Choose a commercial deck oven using real deck-and-tray combinations, electrical or gas requirements, chamber dimensions and bakery workflow.

The short answer

Choose a commercial deck oven by matching your bakery products and tray dimensions to a complete model configuration: deck count, trays per deck, chamber size, energy supply and controls. A two-deck oven can hold two, four or six trays depending on the series and tray format; the number of decks alone does not define capacity.

Deck ovens are often described using short labels such as “two-layer” or “three-deck.” Those labels help identify the overall format, but they leave out much of the information needed for a purchase. This guide uses actual DONGIC configurations to show what should stay together when comparing models.

1. Define the product and tray before the oven size

List what you plan to bake, the tray dimensions, products per tray and batches needed during the busiest production period. Record any baking surface or steam-related requirement so it can be checked against the chosen model and accessories.

Two trays with different dimensions are not equivalent units of output. The product height and usable chamber clearance also matter. If you already own trays, send their actual length, width and depth rather than requesting an oven by tray count alone.

Build a batch schedule for the proposed oven: loading, baking, unloading and preparation for the next batch. Product-specific baking time and results need to be established with your recipe and loading arrangement. Avoid converting a rated tray count into a guaranteed number of loaves per hour.

2. Keep deck count and tray capacity paired by model

The DONGIC deck oven range contains different capacity families. The following table keeps the published model, capacity and electric heating rating in the same row. The ratings are configuration data, not a prediction of actual energy consumption.

For example, DGOMG02I-E2/2 is a two-deck, two-tray model. DGOMG17-E2/4 is also a two-deck model, but it is listed for four trays. Treating both as simply “two-deck ovens” would hide an important difference.

Another family, DGOMG08ST-E1/23, E2/46 and E3/69, is listed as one deck with two or three trays, two decks with four or six trays, and three decks with six or nine trays. Confirm the intended tray format and loading arrangement for that family; do not treat all numbers in the range as independently selectable options.

3. Compare electric and gas configurations with the site in mind

Choose the energy configuration after checking the available supply and the exact model requirements. The DGOMG17 family includes electric and gas versions. Its electric specification lists 220/380V, 50/60Hz with different heating ratings by model; its gas specification lists 220V and LPG/NG gas heating. Confirm the actual supplied voltage and gas configuration rather than assuming every version operates on every listed supply.

Neither energy type is automatically cheaper for every bakery. A useful comparison needs your local tariffs, operating pattern and the selected models. Rated kW values should not be presented as a measured cost per batch.

4. Check chamber dimensions, loading and access

Overall width and depth show whether the oven fits its intended position. Chamber dimensions show whether the food and trays fit inside. They answer different questions, so request both where they are relevant.

The DGOMG08ST family lists an inner chamber of 870 × 760 × 220 mm, while the DGOMG07ST family lists 870 × 730 × 220 mm. Similar exterior styling does not make their internal dimensions identical. Confirm the tray arrangement and any included rack or support for the selected model.

  • Measure the delivery doorway, corridor and any lift or loading restriction.
  • Allow room for opening the door and handling hot trays.
  • Confirm the operating height of each deck and the agreed base or stand.
  • Ask for the model-specific installation and ventilation information.
  • Confirm whether the quoted dimensions include the stand or other accessories.

5. Review controls, options and materials separately

Controls and accessories differ between series. The DGOMG08ST family lists separate upper and lower heating control and an optional spray system. The DGOMG17 family lists a knob control panel, optional baking stone and optional spray system. An option mentioned in a description should be itemized in the quotation if you want it included.

Discuss the foods you bake and the adjustments you need rather than choosing only from a display or panel photograph. If different decks must handle different products, confirm the available control arrangement for the exact model.

Standard construction is also model-specific. The referenced product descriptions include 201-grade stainless steel on the front and other materials in the cabinet construction. They should not be described as standard full-304 ovens. DONGIC can arrange full SUS304 construction on request; define the material scope and include it in the quotation.

Frequently asked questions

Does a three-deck oven always hold six trays?

No. The DGOMG02I-E3/3 example is listed for three trays, DGOMG17-E3/6 for six trays, and the DGOMG08ST-E3/69 family lists six or nine depending on the tray configuration. Specify the full model and tray arrangement.

Is a steam spray system standard on every deck oven?

No. The referenced DGOMG08ST and DGOMG17 listings identify the spray system as optional. Confirm the ordered option and applicable connections in the quotation.

Can I request full SUS304 construction?

Yes. Standard materials vary by model and component, and full SUS304 construction can be requested. Confirm the construction scope for the selected oven rather than assuming the standard specification is already full SUS304.

Should I compare a deck oven with a combi oven?
