Choose a commercial conveyor pizza oven by matching your pizza size and busiest service window to the usable belt width, heated chamber length and tested baking time. Then check the full installation footprint, loading direction, energy configuration and stacking arrangement. A maximum temperature or overall machine width alone cannot tell you how many pizzas the oven will produce.

A conveyor oven moves food through a heated chamber on a belt. For a pizzeria, the buying decision is whether that continuous flow fits the menu and the preparation line. This guide explains the measurements to request, how to compare output claims and what to include in a model-specific inquiry.

1. Start with the pizza and peak demand

Write down the diameter of each pizza, dough style, typical topping load and whether you bake on a screen, pan or another approved support. Include the largest outer dimension of that support. An oven that accepts the pizza itself may still be a poor fit for the pan or loading pattern you intend to use.

Separate average sales from the busiest service window. For example, a planning brief of 72 pizzas in 30 minutes means an average requirement of 144 pizzas per hour during that window. 3. Compare output using a tested loading pattern

The conveyor’s speed affects how long food spends in the heated chamber. A faster setting may move more items through the oven, but the pizza still has to reach the required bake result. Validate the setting with your dough, toppings and baking support before using it in an output estimate.

Ask for an output proposal that states the pizza diameter, recipe, baking time, spacing, lanes and number of operating oven units. A pizzas-per-hour figure without those conditions is difficult to compare. Also distinguish continuous production under a test setup from the output your team can sustain during service.

5. Resolve energy, extraction and cleaning access

Compare gas and electric proposals using the exact versions available for your destination. For an electric oven, provide voltage, phase, frequency and available supply capacity. For a gas proposal, specify the gas type and ask for both gas and auxiliary electrical requirements. Running cost cannot be determined from an equipment label alone without usage and local energy information.

Have the local installation team review the manufacturer’s connection and clearance requirements, extraction arrangement and delivery access. Include space for removing approved cleaning components and accessing service panels. A stack can save floor area while changing working height and access requirements.
